(Alternate title: in which I decide that cocktail recipes totally count.)
If you’re in England in the summer, Pimm’s is inevitable. Since I’ve been back home, I’ve hauled the bottle of Pimm’s out of the bar and have been making whatever we have the ingredients for: Pimm’s Cup, Pimm Pomm, Pimm’s Royale, and the above-pictured Porch Swing, which is a little lacking in cucumberness since we were running low that day.
All of them are extremely easy to make and require little in the way of bar equipment. The recipes are mostly “X oz. Pimm’s, top off with X and Y, make sure there are cucumbers and lemons in there.” If you like your cocktails sweet but not cloying, all of them are really lovely on a summer evening. (When lemonade is required for these, I tend to make mine on the tart side. This keeps things reasonably balanced for my palate.)
