Recipe Project #74: Puerco Pibil Robert Rodriguez Style

Like the man says, not knowing how to cook is like not knowing how to fuck. Both are essential to adulthood, and it’s worth knowing how to do some things really well.

This recipe is marvelous and amazing, and the key is to really push the cumin right up to the edge. You can find a written version of it here. I suppose the banana leaves aren’t absolutely essential, but they seem to add a little something-something to the aroma and flavor. I found mine in the very back of the freezer at one of our local Asian groceries, but you could also just use aluminum foil.
